I made this relish to accompany the catfish recipe, until I decided to add the mustard greens with blackbean sauce (see previous post). I went ahead and prepared it, knowing it would be gone by lunchtime Sunday.Radish and Tomato Relish
1 medium - large radish approx. 12 inch in length, cut diagonally in thin slices
2 large tomatoes, cut in halves and wedges
1 small onion, sliced thin, lengthwise
2 pcs fresh Thai red chili peppers, chopped
1/3 cup cilantro leaves, stemmed and coarsely chopped
juice from 1/2 lemon
sea salt and fresh ground pepper to taste
dash of sesame oil
Mix all ingredients and toss thoroughly. Chill for 20-30 minutes before serving.
A great relish for fried or grilled meat or fish. Yum!
